Signature Dishes

Traditionally skewered and grilled over charcoal, this spicy, hand-minced lamb kebab from Adana, Turkey derives its fiery flavour from red pepper flakes and its juicy texture from lamb tail fat. It is served on flatbread with grilled vegetables such as tomatoes and peppers, often with a side salad, and is characterised by a deep red colour and smoky aroma.

This famous Thai spicy and sour shrimp soup with coconut cream is characterised by a rich blend of tangy lime and fiery chili, complemented by the natural sweetness of fresh shrimp and the distinctive herbal aromas of lemongrass, galangal, and lime leaves. The dish is distinguished by a rich or clear broth, vibrant orange colour, and fragrant aroma.


For this classic Singaporean national dish, Sri Lankan crab is cut into pieces, coated with flour, and deep-fried, then quickly stir-fried with soy sauce, oyster sauce, black pepper, garlic, onion and butter. The thick sauce covers the crab, creating the dish's famous spiciness and rich dry aroma.
